Fit Bites by Nanitas is an emerging artisan functional bakery: protein-focused snacks, desserts made without refined sugar and artisan breads, all with a nutritional purpose. Unlike conventional baking, every formula balances nutrition targets, ingredient functionality, sensory quality, cost and consistency, and a small change moves all of them.
As the portfolio grew, formulas spread across spreadsheets, handwritten notes and kitchen trials. Fit Bites needed a more structured process.

Fit Bites works in AKA Studio with guidance from an AKA food and biotechnology engineer, alongside Adriana’s hands-on baking.
Nutri Almond bread came out dry, sandy and eggy. AKA Studio’s formulation analysis traced it to flaxseed starving the crumb of water and suggested what the recipe never had: added water and xanthan gum. Its V3 scored best in the comparison and is still being tested and refined.
The next challenge is moving from successful kitchen formulas to consistent, repeatable and economically viable production. Fit Bites is beginning to evaluate capacity, batch standardization, ingredient sourcing and potential co-packing partners for its FIT line, while NUTRI, BITE and HOLIDAY keep growing.
Documented formulas are the foundation, with production validation and batch testing still ahead.
“AKA Studio is helping me transform the way I develop products. Instead of relying on scattered notes and previous trials, I am building a structured formulation process that connects nutrition, ingredient functionality, cost, and product quality. For a growing artisan functional bakery like Fit Bites, this is an important step toward consistency and scalability.”
